🍗 Chicken and Rice Casserole (Classic Comfort Recipe)

- 2 cups cooked, shredded chicken (rotisserie works great)
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of chicken soup
- 1 small onion, diced
- 1 cup frozen peas and carrots (optional)
- 1½ cups shredded cheddar cheese
- 2 tbsp butter
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & pepper to taste

- Preheat oven to 350°F (175°C).
- In a skillet, melt butter and sauté the onion until soft.
- In a large bowl, mix rice, chicken broth, milk, cream of chicken soup, garlic powder, paprika, salt, and pepper.
- Stir in shredded chicken, sautéed onions, and vegetables (if using).
- Pour mixture into a greased 9Ă—13-inch baking dish.
- Cover tightly with foil and bake for 45–50 minutes, or until rice is tender.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10–15 minutes until melted and bubbly.
- Let rest 5–10 minutes before serving.
