Hearty Sausage Casserole
Ingredients (4–6 servings)
- 6–8 Sausages (pork, beef, or your choice)
- 1 large Onion, chopped
- 2 Carrots, sliced
- 2 Potatoes, diced
- 1 Red bell pepper, chopped
- 2 cloves Garlic, minced
- 1 can Chopped tomatoes (400 g / 14 oz)
- 1 cup Chicken or vegetable stock
- 1 tsp Paprika
- 1 tsp Dried thyme
- Salt and pepper to taste
- 1 tbsp Olive oil
Instructions
- Brown the sausages
- Heat olive oil in a skillet over medium heat.
- Brown the sausages on all sides (they don’t need to cook through yet). Remove and set aside.
- Sauté the vegetables
- In the same pan, sauté onions, garlic, carrots, and bell pepper until slightly softened.
- Combine in casserole dish
- Transfer sausages and vegetables to a baking dish.
- Add potatoes, chopped tomatoes, stock, paprika, thyme, salt, and pepper.
- Stir gently to combine.
- Bake
- Cover with foil and bake at 180°C (350°F) for 45–50 minutes, until potatoes are tender and sausages are fully cooked.
